The 21-year-old two-time Knights premiership winner has built a reputation for being one of the world's best game managing halfbacks but Southwell said Prince had convinced her that he would enhance her attack even further.
Prince won the 2005 premiership with Wests Tigers at No.7 and forged a 300-game NRL career as a complete playmaker before stepping into coaching. Last year he guided the Broncos to premiership glory, his first as a coach and the club's fourth title.
"He is a halfback and has won a few premierships too and I think that speaks for itself," Southwell said at the club's season launch.
"I'm loving just soaking up everything he has to say. He likes me to take the game head-on and he wants to get me running the ball more.
"I think that is really cool and I know my dad would be happy to hear that. I am loving everything he is going to add to my game. There is so much I can learn from him and all the girls."
Southwell had options when she was thinking of stepping out of her comfort zone at Newcastle but said there was one thing that stood out from afar about the Broncos.
"I could see the girls were learning and that is what I want to do," she said.
"I want to become a better football player and ultimately a better person and that was something I could see here."
Living away from home for the first time, she has been embraced by her new teammates, many of whom are Queensland stars in State of Origin.
The NSW half was one of the side's best in the 3-0 series win over the Maroons in the recent Origin series and joked that she hoped her Broncos teammates had forgiven her for that.Â
"They are great people and I am loving the way these girls have accepted me and welcomed me with open arms," she said.
Southwell has also reunited with new Broncos captain Tamika Upton who has a record five NRLW titles to her credit, including two at the Knights alongside Southwell.
"Meeks is a really good mate of mine and I loved playing with her last year in the Jillaroos," Southwell said.
"She is an amazing leader and leads with her actions."
Southwell has no doubt the Broncos can lift the trophy at the end of the season if they play to their potential.
"Definitely. I want to win every game," she said.
